Instant-read probe thermometer (ThermoWorks Thermapen ONE)

Pull temp is the whole game: every /chef method ends on a probe number. ThermoWorks specs it at ±0.5°F from -4 to 248°F with a 1-second read; ATK names it their preferred instant-read.

Leave-in probe thermometer (ThermoWorks ChefAlarm or Square DOT)

Roasts, smokes, the Breville and the pellet grill run with the door shut; a leave-in probe alarms at the pull temp so you do not open up and guess. ATK co-winners; the DOT has 2 probes (food + air) and ATK also names it its favorite oven thermometer.

Infrared (surface) thermometer

"Throw it on when the pan reads X": ATK says a steak pan should be at least 450°F; ThermoWorks gives 400-450°F for searing. IR reads surfaces only, not the inside of meat. ThermoWorks Industrial IR Gun spec: ±4°F or 2% of reading (32-1022°F), 12:1 distance-to-spot. Shiny stainless needs an oil film or emissivity ~0.59; cast iron reads near 1.

Digital kitchen scale (grams)

Salt goes on by weight, not spoons: kosher brands differ by volume (Diamond Crystal 2.8 g/tsp vs Morton 4.8 g/tsp in our /salt table). ATK winner OXO Good Grips 11 lb was 1-2 g off at times; the ThermoWorks Gravitas is ±0.7 g (NIST) and reads 0.1 g.

12-inch cast-iron skillet (Lodge, or Smithey No. 12)

Pellet grill partial

One machine that smokes low (225°F) and sears high (450-500°F setting) for brisket, ribs, tri-tip and picanha.

Instant Pot (electric pressure cooker / multicooker)

The fast way to braise: chuck roast, short ribs, lamb shanks and oxtail go fork-tender in 35-60 min at high pressure instead of hours. ATK names the Instant Pot Pro 8 qt its winning multicooker: a flat-bottomed pot for searing on sauté, a keep-warm setting that can be turned off, and a steam-release switch that keeps hands clear. ATK notes it does not slow-cook large cuts well.
