Finding a Processor Near Kansas City
Status: Proven (custom processing is how small herds have always done it)
My place is in the Kansas City area, on the south side. Distances below are rough, rounded miles from the south KC area, sorted nearest first. Actual driving distance depends on where you start in the metro and will usually run longer.
Crossing the state line to a plant: Missouri lets cattle enter without a health certificate (CVI) when they go straight to an approved slaughter plant (MDA Animal Health). That's Missouri's rule for cattle coming in. For hauling my own cattle out to a Kansas plant like Steve's in De Soto, I'll check Kansas's entry rules and call the plant first.
Three kinds of processing, in plain words
- Custom-exempt: I own the animal, the plant slaughters and cuts it for me, and every package is stamped "NOT FOR SALE." I can eat it and share it with my household and non-paying guests, but I can't sell the meat. If friends want in, they have to buy a share of the live animal before slaughter, their names have to be on the record, and each owner pays the processor directly (OSU Extension EM 9345; FSIS exemptions guideline).
- State-inspected: a state inspector is present, and the meat can be sold, but only inside that state.
- USDA-inspected (FSIS): a federal inspector is present, and the meat can be sold anywhere in the US. Every plant below holds a USDA grant of inspection and reports doing custom-exempt work.
For 2027, I mostly need custom-exempt: beef for me and for friends and family who buy a live share.
Processors within about 100 miles
How I checked: I pulled candidates from LocalMeat.org's directory, a private site built from FSIS's establishment list. Then I confirmed each one on the plant's own website where it has one. The FSIS website itself blocked my requests, so I couldn't check the federal list directly. Prices are copied from each plant's own page on Oct 28, 2026, and they change often. None of these plants publish a lead time. Call before you buy cattle, not after.

Left off the list:
- W Diamond M Meats (Spring Hill, KS) reports custom-exempt work for hogs only.
- I didn't check Ridgeway Freezer (Ridgeway, MO, ~95 mi) or Alta Vista Locker (Alta Vista, KS, ~104 mi).
Not covered yet: plants that are only state-inspected or only custom-exempt. Missouri's Meat and Poultry Inspection Program and the Kansas Department of Agriculture keep those lists, but neither list would load for me. There are probably more small lockers close by that I haven't found.
What I'll ask every processor
- Do you take custom-exempt beef from new customers, and how far out are you booking?
- Do you slaughter on site, or can you do a farm kill?
- What do you charge (kill fee, cut and wrap per pound of hanging weight, disposal), and how long do you hang the beef?
- For split owners: can each share owner fill out their own cut sheet and pay you directly?
- If I ever want to sell by the cut, can I book an inspected slaughter day?
Why booking early matters
Extension specialists have warned for years that small plants book months ahead (UW-Madison Extension). One Kentucky specialist also cautions that a fall slot plus a yearling steer that isn't finished can mean "leaving weight out in the pasture" and losing marbling (Ohio BEEF Cattle Letter / UK). That shapes my 2027 milestone.
